Ruth's Corn Cake



What you need:

• 6 Tbsp butter
• 1/2 cup sugar
• 2 eggs
• 1 cup corn kernels (best if fresh)
• milk
• 2 cups flour
• 1 tsp. baking powder
• 1/4 tsp. salt
• 1 vanilla bean
• 1/4 tsp. vanilla extract
• 1/4 cup unsweetened shredded coconut (optional)


What you do:

Preheat the oven to 350ºF.

1. Beat butter and sugar together in a bowl with an electric mixer.

2. Crack the eggs and beat them into the mixture.

3. Cut open the vanilla bean. Scrape out the seeds. Put the seeds in the food processor with the corn kernels and vanilla extract. Puree until nearly smooth. Add enough milk to bring liquid up to the 1 cup line.

4. Mix together flour, baking powder, and salt in a bowl, and coconut if using it. Add to batter from steps 1 and 2, alternately with corn mixture, beating after each addition.

5. Pour into 9 by 9 square cake pan.

6. Bake for 40 to 45 minutes. Prick with toothpick to see if it is done. If it comes out clean, then it is done.
